DIY Strawberries & Cream Popsicles

Looking for some fresh DIY summer activities for adults with special needs? These strawberry and cream popsicles taste like ice cream with fresh slices of strawberry. They’re soft, creamy, and awesomely easy to make. 

Ingredients You’ll Need:

  • Fresh Strawberries
  • 1/2 cup sugar or agave syrup
  • 1 pound of strawberries
  • 1/2 cup heavy whipping cream
  • 1 cup low fat milk
  • Popsicle Molds (Molds with flat sides work well because they show off the strawberries)
  • Food Grade Popsicle Sticks

How to Make Strawberries and Cream Popsicles

  1. Start by mixing together the lowfat milk and sugar in a bowl until the sugar is dissolved.
  2. Next, add the cream. Whip into the mixture until it starts to thickens a bit and has froth around the edges.
  3. Slice the strawberries into thirds. 
  4. Gently add the strawberry slices, pressing some up against the sides, trying not to smoosh them too much.
  5. Pour the cream mixture into a popsicle mold of your choice.
  6. Freeze the popsicles for 4-6 hours.

There are at least two other ways to make strawberry and cream popsicles. One way you make them is to place all of the ingredients, apart from the cream, together in a blender. You then add the cream and blend until thicker and a frothy. 

Another way to make strawberry and cream popsicles is to puree the strawberries together with a blender, then mix the other ingredients in a separate bowl until thinker and frothy. Then layer the strawberry puree alternately with the cream mix. 

And, for a healthier version, you can use greek yoghurt, vanilla extract and maple syrup in place of cream, milk and sugar. For a vegan version, 1/2 cup raw cashews, soaked in water for at least 4 hours, 1 1/4 cups coconut milk, 3 tablespoons maple syrup and a pinch of salt in place of the milk, cream, and sugar.
