DIY Mango & Greek Yoghurt Popsicles

Looking for some fresh DIY summer activities for adults with special needs? These very tropical mango and cream popsicles taste like ice cream with fresh pieces of mango. They’re SO good. 

This is a great recipe to do with individuals as well as groups with a variety of different intellectual and developmental disabilities.

Ingredients You’ll Need to Make Them:

You Will Need:

  • 3-4 mangoes 
  • 4 tablespoons honey, divided
  • 1 and ½ cups Greek yogurt
  • 1 teaspoon vanilla extract
  • Popsicle Molds (Molds with flat sides work well because they show off the cherries)
  • Food Grade Popsicle Sticks

How to Make Mango and Yoghurt Popsicles

  1. Slice the mangoes and remove the stones. 
  2. Puree two thirds of the sliced mangoes in a blender 
  3. Add 2 tablespoons of honey to the pureed mangoes.
  4. Mix until well combined.
  5. Dice the remaining mango slices.
  6. In a large bowl, combine Greek yogurt, remaining honey, and vanilla extract. 
  7. Mix until combined. 
  8. Stir in the diced mangoes.
  9. Scoop two tablespoons of mango puree into each popsicle mold. 
  10. Next, scoop two tablespoons of Greek yogurt mixture into each popsicle mold.
  11. Repeat until popsicle molds are filled to ¼” from the top.
  12. Freeze for 4-6 hours. 
  13. Once nicely frozen, run the mold under warm water to loosen the popsicles and eat ‘em!

For a vegan version, use 1/2 cup raw cashews, soaked in water for at least 4 hours, 1 1/4 cups coconut milk, 3 tablespoons maple syrup and a pinch of salt in place of the greek yoghurt and honey.
